I Heart Vegetables

You don't catch me cooking very often, but after a couple of weekends of over indulgence I thought I'd better make sure I got back on the wagon and made up my five-a-day for the last week and a half!

This is a recipe which is sort of my own devising - I basically adapted one from the bbc good food guide for what I had in the cupboard.

It goes something like this:

Chop and peel whatever vegetables you have in the house, par boil potatoes, carrots etc and then stick them in a dish with plenty of olive oil and loads of spices (I went for chilli flakes, garam masala and some curry powder for good measure).
Roast for about 20 minutes and then add tinned tomatoes and chick peas, and maybe more spices!
Stick back in the oven for half an hour or so.

Nom!

I'm lacking in dinner inspiration at the moment - I'd love any recommendations you have for simple healthy meals?

This looks really yummy and filling - yet so simple! It also looks like the kind of thing you could make a big batch of and then have for lunch over a couple of days by just heating through in the microwave?

I'm on a healthy eating kick at the moment, but I normally find that what I eat isn't really that unhealthy I just eat far too much of it. Some favourites of mine are veg packed pasta bakes and stir frys (which can be really cheap if you buy the bags of veg/noodles) but I want to move away from some of my tried and tested meals, so definitely want to give this one a go! :)

Oh yum!! I am totally going to try this when I am back. My favorite easy meal is asparagus Parmesan soup--I make it all the time. it's so yummy and so easy to make! Let me know if you need the recipe :)

Yum, it looks absolutely delicious! There are some recipes on my blog that you could try out - I recommend the chickpea salad, roast veggies with couscous, sundried tomato pesto (good for sandwiches, wholemeal pasta), & hummus/mutabal with crudites. Hope that helps! xx

That looks lovely, it's just he sort of thing my boyfriend makes! he's a much better cook than me, so I tend to let him do the cooking. He made a gorgeous cauliflower and fennel roast the other day which I would recommend http://pinterest.com/pin/72023523/ it was so delicious, I didn't know caluiflower could be so tasty without cheese ;)

That looks YUMMY! We tend to eat a lot of things that we pre make and freeze at this time of year as work can be chaotic. But if your looking for something quick, healthy and variable, stirfry and noodles are my fave- just throw whatever you've got through the wok and whatever spices take your fancy.

That looks soo yummy, and i love veg so i shall deffinately be trying that. Espesh when im back to uni. The other night me and my mum did a lamb tagine but it was a weight watchers recipe so i was worried it would lack in flavour but it was soo good and you can put peppers, chickpeas and aubagine and onion in it and serve with cous cous and flatbread which is quite low in calories too! Id deffinately reccomend it :)

Me too I love veg, this looks delicious. I like just plain old roast veg with halloumi cheese perhaps red onion mushrooms and aubergine and cous cous some times with a mint yoghurt dressing. I am also currently addicted to watercress, feta and pea salads with Waitrose sweet potatoe falafel.
