Stuffed Peppers with New Potatoes, Feta and Pesto

This week James and I made one of our favourites - peppers stuffed with feta, new potatoes and pesto. I always thought I hates stuffed peppers because usually I find them really watery and insipid, but somehow this recipe doesn't taste like that at all. It's from the River Cottage Veg book, which I bought for my parents for Christmas but I think I use it more than they do! I might need to persuade them to gift it back to me this year...

It's really easy to make - you just stuff a halved pepper with 50g of par-boiled new potatoes and 50g of feta per person, top with pesto and pop in the oven at 200 degrees C for 40 minutes or so. We ate it with warm baguettes and butter. Rub some oil over the outside of the pepper before it goes in the oven to stop it burning.

That looks so yummy, i have potatoes in the allotment at the moment and peppers in my fridge, so i will get some cheese and give this a go at the weekend :)

i've very down with this, love this sort of stuff and it's quick so no hours of prepping.
