Salad Days

I've been on a bit of a money saving kick recently, and one of my worst spendy habits is definitely my Pret addiction. And all other delicious lunch based food shops (Itsu, you have been my downfall too many times!) To try and save some pennies I have been making my lunch instead of eating out each day, and I have gotten bored of sandwiches incredibly quickly! Even the peanut butter and jam sandwiches which I ate every day at school for years are starting to get a bit dull.

To mix it up a bit I made a big bowl of quinoa + salad + stuff for lunch this week, and it was a really nice alternative. The batch above lasted me for three days, and I basically just filled it with whatever we had in the cupboards - being pepper, carrot, sweet potato and feta in this case. I read a tip, probably on one of the hundred or so photos of quinoa I have pinned on pinterest(!) which suggested cooking the quinoa with a stock cube to give it a bit more flavour, which was a really good idea. 

Do you have any good lunchbox ideas for me to try? Please let me know your favourites to give me some ideas for next week!

That looks delicious! I am health kicking too, and make my lunches so great for me! I'm obsessed with cous cous but quinoa might be a good alternative for me. xx

i'm terrible with lunch! for me it's always the hardest meal of the day to plan for because i've got to be able to bring it in to work and can't cook anything properly like i can at home for dinner. your salad looks great though! i need a few more ideas for lunches myself, lately i've just been eating soups and couscous with a veggie pattie and tzatziki dip on top.

Also, I'm really getting down with your current area of eating whatever you can find in the cupboards at the moment; as I'm moving out of my apartment in less than a months to fly home, and the last two weeks of which I'll have my best friend here I've been trying to make up recipes with what I've got and fresh vegetables which as been a lot of fun (?) I'm now out of rice, couscous etc. so now I'm seeing what I can make for filling dinners with just fresh produce and whatever spices I have left!

I use toasta-bags which allow me to toast an entire sandwich in my office toaster. Just about every savoury sandwich is improved this way and it keeps me from getting bored with the soggy cheese and tomato :) They cost a few £ and are reusable hundreds of times.

Hi - amazing but as the rest of the comments here, I've been in the same phase! Plus I am trying to cut down on eggs for breakfast as well so that is another area I need working on.
I usually eat variations of cold pasta salad with lots of veggies in like tomato and zucchini!

This looks so good! I tend to buy lunch at my work's canteen but it does add up on a daily basis. I love quinoa, it's one of the few things I can manage to cook - I flavour mine with soy sauce but will have to try a stock cube. x

I love your food photography, everything always looks so delicious!
I work from home so packed lunches aren't something I can help you with, I love the idea of adding a stock cube, I'm going to try making cous cous with stock instead of just adding boiling water....
