Pasta with Avocado, Pesto and Salmon


This is a super simple meal I have made a couple of times recently. It came via a real life Italian person, so I consider it vaguely authentic, although it is so easy I am not sure it even counts as a recipe, and doesn't even really have a proper name - just 'pasta with stuff that's in it'. Regardless, I love having a few healthy, easy go-to meals with few ingredients which only take 20-30 minutes to prepare which I can easily make in a pinch, and this is definitely in my weekly meal rotation now.

It makes a great week night supper, and I made extra so we could eat it for lunch the next day. Admittedly I get a few comments at work for my smelly lunches, so this is one I might need to confine to the kitchen rather than eating it at my desk!

Ingredients - to serve two

Pasta - about 100g per person or however much you usually serve
Pesto - A couple of large spoonfuls
Avocado - one, slightly overripe if possible.
Salmon - 1-2 fillets, depending on how hungry you are.
Spritz of lemon juice, if you have some


Preheat your oven to around 200 C (180C for a fan oven).

20 minutes to dinner - Place your salmon on a large piece of tinfoil, on a baking tray. Season, and loosely wrap the salmon in the tinfoil so it is covered and pop in the oven.

scoop out your avocado and mash it in a bowl until it is guacamole-consistency. Add two large dollops of pesto and mix. Transfer to a small saucepan.

10 minutes to go - put your pasta on to cook (as per packet instructions if you don't know how to cook pasta - no judgement here!)

5 minutes to go - put the avocado and pesto mix on to a low heat and cook through.

2 minutes to go - take your salmon out of the oven and flake it up with a fork. Add a spritz of lemon
juice to the avocado-pesto, and drain your pasta.

Assemble all in a bowl and eat!
